Contents
Students will deepen their basic knowledge of food inspection and control methods, including how to manage sampling and laboratory analyses required, and how to interpret the results. They will acquire the expertise necessary to implement the HACCP system throughout all stages of the production chain for meat and meat products, milk and dairy products, fish and fish products, eggs and egg products, and honey. In addition to health aspects, food quality issues will be consistently addressed. Students will also be trained in computerized data management and the development of monitoring and surveillance plans, including epidemiological ones. Particular emphasis will be placed on knowledge of the laws governing the food products in question, as well as the most effective and rapid methods for consulting such regulations. Theoretical knowledge and applied activities will focus on real-world cases and will be developed according to the principle of problem-solving training.

Educational objectives
Provide basic information on: a) the structural characteristics of slaughterhouses, meat cutting and processing plants, and the production and processing of milk, fishery products, eggs, and honey; b) the relationships between these facilities and the environment; c) the main operations performed within these plants. Provide essential information for identifying meat from various animal species, including fishery products, and their freshness, and for carrying out inspections and controls on meat, milk, fish, and fish products, including distribution and administration, as well as the relevant legislation. Seminars, practical exercises, and exercises will contribute to the acquisition of fundamental knowledge on the methods of evaluation, inspection, control, and analysis of products of animal origin. On-site visits to slaughterhouses and meat cutting plants are also planned. Learning verification modality
The exam includes an oral examination lasting about 30 minutes which is aimed at ascertaining the level of knowledge and understanding reached by the student on the theoretical and methodological contents indicated in program and the ability to apply the skills acquired. The oral exam will also allow to check the student's communication skills (language properties and exposure).
