| Contents | The course covers the main aspects of food chemistry, with particular emphasis on the structure, properties, and transformations of food constituents. Specifically, the following topics are covered: - Chemistry of food ingredients and nutrients; - Composition of foods of animal and plant origin; - Biomolecules in foods: classification, characteristics, and main sources; - Food labeling; - Dietary fiber: definition, components, and role in the diet; - Food alteration and adulteration; - Chemical transformations of the main food fractions (lipids, proteins, and carbohydrates): mechanisms, risk factors, and prevention strategies; - Evaluation of the composition and quality of foods such as milk and dairy products, vegetable oils, and fats. |

| Educational objectives | The course aims to provide fundamental knowledge of the structure and properties of food constituents and the main mechanisms of food spoilage. The knowledge acquired will cover food composition, the structure of food constituents, and the main chemical transformations that can occur as a result of natural phenomena or technological treatments. At the end of the course, students will be able to: -interpret the chemical composition of foods; -recognize the main phenomena of spoilage and adulteration; -evaluate the quality of a food product based on its composition and degradation processes. |
| Prerequisites | For a better understanding of the contents and to achieve the objectives of the course students must have knowledge of general chemistry, organic chemistry and biochemistry. |
| Teaching methods | The course is based on lectures face-to-face on all topics of the course. The lessons take place at Polo Unico Sant'Andrea delle Fratte, based on the calendar published on the TEPAL web site. |

| Learning verification modality | The assessment exam is written and includes: - multiple-choice questions, in a number proportional to the credits of the modules; - one open-ended question for each module. Open-ended tests may be replaced, depending on the teaching activities, by alternative forms of assessment such as: group work; individual presentations; case study analysis; exercises or applied projects. Conditions for passing the examination The successful completion of the exam is subject to two conditions: 1. The overall score (closed-ended + open-ended questions) must be = 18/30; 2. For each module, both of the following requirements must be achieved: a minimum percentage of correct answers to the closed-ended questions; a positive evaluation of the open-ended question (or substitute test). If one of the two requirements in point 2 is not met, despite having achieved an overall pass, the student may take an oral exam to make up the remaining gap. Failure to pass the remedial test will result in failure to pass the exam. |
| Extended program | The course covers the following topics in an integrated manner: - Foods, nutritional principles, and nutrients; - Food labeling; - Biomolecules in foods: classification, characteristics, and food sources; - Dietary fiber: definition, components, and nutritional role; - Phenomena of alteration of lipid, protein, and carbohydrate fractions: substrates, mechanisms, and prevention; - Evaluation of the composition and adulteration of foods such as milk and dairy products, vegetable oils, and fats. |

| Educational objectives | Basics on the processes for agri-food industries. Interpretation of process flow-sheet for agri-food industries. Evaluation of incoming raw materials in agri-food industries. Enhancement and empowerment of the knowledge already acquired by students, with particular stimulus interdisciplinary use of the same, including that of the English language. |

| Learning verification modality | The written test is composed by: - Close questions (item/questions or multiple choice tests), the number and the value of which is directly proportional to CFU of every integrated module and to CFU total number of discipline - One open question for every discipline module. The open question, according to the didactic method used in the modules, can be replaced by different examination mode: team work, plenary presentation of individual research program, solution to special cases or exercises, project elaboration. Essential conditions to pass examination and to obtain its certification. - First condition. Total result (the sum of close and open questions marks) must be at least 18/30. - Second condition. For every module: A) certain minimal percentage of right answers (on the total number of close questions) must be achieved; B) the evaluation for open question answer or for any other different examination mode must be positive. In case the student reaches the first condition but do not achieve one (A or B) of the second condition, he can do the oral exam to recover the insufficient part. If the student fails the oral exam, he fails the exam of discipline. |
| Extended program | Provide students with scientific and technical knowledge for understanding the major processes of transformation of the agro-food industry. Will learn more in food technology, production processes, technologies, packaging and distribution of products, process parameters and their unit operations, methods of representation in the form of process flow diagrams (flow-sheet, flow chart). Some information will be also given on the disposal of waste- and by- products. |
